Healthy recipes for fussy eaters?

Hi IM's,
My fiancé and I want to start eating healthier and are after some simple but healthy recipes.
I'm a SAHM with my extreme fussy butt, so meals need to be quick and easy! I love to cook and experiment with food but it's a bit of a challenge with my loving little monster.
We also struggle a lot financially so cheaper options would be greatly appreciated. (We buy our meat in bulk and most products homebrand)
Chicken based meals would be best as I don't eat red meat - but fiancé loves it! - and we both don't like seafood. My fiancé is also an extremely fussy eater. Think of a toddler who refuses to eat his vegetables. If it's hidden, it's fine!
I've tried Googling a lot or recipes but they always seem very fancy or not very suitable for a child (son is 8 months old but we're doing baby led weaning).
It's a bit difficult since all of our tastes vary greatly, so I would love to know of some healthy recipes that even your fussy eaters love!

Home made baked beans using kidney beans and making your own tomato sauce just using fresh tomatoes

Cauliflower macaroni and cheese (the cauli can be added as a purée)

Cheesy chicken with cauliflower 'rice'

Home made Pizzas on pita bread

Chicken noodle soup

Potato bake (can also use sweet potato in it the cream and bacon etc disguises it)

Beef stir fry

Homemade hamburgers using chicken mince with grated carrot and zucchini in the mince

Chilli con carne (can modify it to have no chilli for the little one) with capsicum and mince

Beef and mushroom 'pie' with mashed potato (can also use sweet potato) and parm cheese in top. Maybe use grated carrot in it too.
