When is an appointment age to specialise in sport? My son is a great all rounder loved it all. However many of his peers seem hyper focused on a sport. If he doesn’t make a decision will he be surpassed by his peers?

If he wants to focus on one sport and it would make life easier for your family only having the one sport to worry about then yes, I think its a great idea. If he is still undecided and you don't have a problem with the different sports then let him keep going for a year or two then decide.

Unless he plans on being a professional athlete, being an all rounder is a good thing.

There is nothing wrong with being an all rounder. There are some really interesting stories of professional athletes narrowing down their choice quite late. I think a pro golfer and now he coaches tennis at a high level.
Most families just can't manage multiple sports or as a family they are just particularly interested in one.
Dont let it bother you. The most important thing is your child is enjoying themselves. If they are enjoying it, they are more likely to continue playing the rest of there lives, far more important than what level they play at.
