My son currently has a loft bed with the desk underneath. His room is small so it’s been a great space saver as he’s been growing up. He’s about to turn 11 and has asked for a normal bed. My question is what size? Im thinking a double so there will be more room as he grows.
Do you find that this age/preteens need as much floor space in their room?

Doubles are the same length as a single bed. With limited space I would get a king single.
A king single may be a better option, they're slightly wider than a regular single but longer than a double (and growing teen boys typically need the extra length more than the extra width).
My 13 year old son has a double that takes up most of his room, then with the little remaining space he has his desk and wardrobe (all his toys are packed away now). He's constantly stubbing his toes on things due to it being cramped but he will not downsize lol.
How tall is your family?
I’d suggest a king single, rather than a double if the room is small. You can get double loft beds though if you still want the space underneath, but they aren’t as long as kings.
King single if it's a small room, definitely. If you can go bigger, skip the double and get queen size for the length.
When I was that age, my mum got me a queen bed, but I had a large room - I had the master, as my parents renovated a bigger room for themselves.
Although, my sister got a king single as her room was a lot smaller. Any bigger it would have taken to much space up. She upgraded to a double (her choice) at 16
