We started toilet training our 3yr old in Sept, he got wee’s within a couple of weeks but took about 4 weeks to master poo’s.
He had 5 weeks with no accidents and then suddenly started doing poo’s in his undies and hasn’t stopped!
He starts school in Feb & I’m freaking out that he’s not gona figure it out again before then!
Any advice???

Normal. He's very young. He'll get there. I'm not sure wha t school he starts at age 3 but that will be fine he wont be the only one at that age.
If he was 3 in September, he won't be 5 before June 30. So he wouldn't be starting school in qld. What state starts so young? I'd be holding off a year personally.
Unsure where he's starting school at 3. In QLD they have to be 4 by June 30 to do kindy.
My DD struggled badly. I found she'd hold onto her poos until she finished kindy & drop them continuously all afternoon as soon as she got home.
She starts prep (QLD) end of this month & has only just decided in the last 2-3 months to go to the toilet again.
If by school you mean kindy/preschool/early learning centre etc - I wouldn't even sweat it. Toilet accidents and not having a full grasp on toileting in general is very common in that age group. The staff will be well equipped and trained how to manage this, they can even help you with some strategies.
(I speak as someone who has worked in early learning).
If by school you mean first year of primary school, 100% see if you can hold off for at least another year. My daughter was 4 going on 5 when she started school, we were already having some issues with encopresis (holding poos/poo leakage in layman terms). Her teacher had absolutely no patience or understanding about it which really made the problem worse.
I would also suggest seeing your GP just to rule out any physical issues such as constipation or encopresis.
As others have asked, what is school in this situation?
I assume 3 year old kindy, in this isntance it is fine. By the time they go to ‘normal’ kindy at about 4.5-5yrs then they should be toileting most times without accidents and able to wipe as the teachers wont help with this. If your child is starting primary school (unlikely in the scenario you gave) then you may want to hold back on letting your child start school until they have stopped soiling themselves.

If he's not toilet trained he won't be starting school. Worst case he'll start at the mid year intake or wait until 2022. It's been a condition of starting school or prep for years.
The average age is almost 4yo for full toilet training, and one one before that has been lucky. Boys are harder to train too (in my experience ) check to see if he's constipated, this can cause accidents as they tend to push all day.
