Multiple questions so please bare with me!
1) I am very curious to know when do you start toilet training your kids? My daughter is 16 months and she keeps wanting to go without a nappy but I am tired of cleaning up the pee all the time!
2) how do you even start the toilet training process?
And 3) when do you convert the cot into a toddler bed? My daughter is trying to climb out of the cot and I have had a few people ask if she's in a toddler bed yet but I'm not sure when the right time is?

Toilet training I find is better between the ages of 2 and 3. Before toilet training some prerequisites are important like 1. Demonstrating some sign or knowledge that they are about to pee! 2. Being able to go at least 1hr between peeing (otherwise you just end up never leaving the house) 3. It can also be helpful if they start to pee they can stop peeing if surprised (so if they start to have an accident you can say 'stop' and race them to the toilet).
To start toilet training you decide if potty of toilet is more comfortable and then wait for the signal they are about to pee, take them to sit on the toilet and if they pee you throw a party!!! Accidents are part of training. We stayed home for a week to do it but by 3-5 days was done and dusted. He was very ready as we'd waited for him to have the prerequisites.
I'd convert the toddler bed now. It's a lower height to fall from than a cot, and the cot is no longer doing its job! My son was a climber too.....

How do I get her to stay in bed and not just climb out?
Unfortunately you'll probably have to stay close until she learns, but for safety in the cot you'd have to do the same anyway!
It's not the easiest time, and I remember thinking I wish baby cages weren't child abuse!!! Yes I was kidding I didn't want my kid in a cage

Toilet train after three. Make it easy on yourself. When she can do it she'll pick it up in days without accidents.
Bed is totally your choice. That young she'll probably need a rail to stop her falling out.
1&2). My daughter turned 3 in January and she got it straight away... after months of me agonizing and comparing and trying. One day she just decided to do it herself... there's no correct answer, do it when you and your child feel it is right. We started with toilet before bath for a while and it just eventuated from there. Let her see you go to the toilet, tell her you're doing wee's or poo's cause mummy is a big girl.
3). My daughter went into a toddler bed around 18months... so did my son... I just got one of those barrier things and slept in the bed with them for the first night and made sure day sleeps were established.
