What to cook when you hate cooking

Some nights I just seriously cannot be bothered eating let alone cooking. I get little joy out of cooking and preparing a meal when most of the time the kids don't eat it and I look at it and feel uninspired to eat it as well. My son will only eat vegies when they are raw as he likes the crunch and my daughter is very fussy and won't try anything new. I'm vegetarian too so I hate touching or preparing meat.

I'm really struggling to meet everybody's needs and appetites. They are so hungry after school so I allow them a couple of snacks, but then they don't want dinner but are hungry later when it's bedtime.

They actually don't like the word "dinner"! They hear it and say "can we have something else" before they even know what it is!

Why do I even bother? I want them to eat healthy meals that they enjoy and that we can share together. Has anyone got any tips? Or know a good vegetarian cookbook with child friendly, easy to make recipes.

Try something super simple like crunchy veggies with a dipping sauce (cauliflower sauce, satay sauce etc) and don't call it dinner...call it tea ;) you don't need to be fancy. Just use a variety of different veggies to get different colours. My mums a vegetarian and our favourite meal was tofu San Choy bow. Super easy to make and delicious !!!

I'm a big fan of the slow cooker, you can make just about everything in it and it comes out amazing. You put something on in the morning and dinner is all ready and waiting for you by bedtime. I do
Pork and veggies
Spaghetti
Curries
Silverside and veg
Lamb and veg
casseroles
Lasagna
Chicken cacciatore
You can even get creative and do desserts like fudge in them mmm
