Your best bet is to contact a women’s legal service or a similar legal hotline for advice. It will vary depending on court orders etc and how they are worded etc.
If there are no court orders stating you need permission to take children insterstate then you don’t need writtten permission from the father to go as long as it doesn’t interfere with his time with his scheduled time with the children.
I’d still get legal advice to confirm this.

Then as long as it’s on you time you can take them where ever you like
If it's during your time there's nothing he can do, my ex tried the same. If you were moving different story, holidays within Australia are nothing to the law. You will be home before he even gets through to anyone.
